I remember one particularly hectic Wednesday. I was staring blankly into the fridge, wondering what magic I could conjure up for dinner. Sound familiar? Takeout was tempting, but my wallet (and my conscience) protested. That’s when I remembered a beef and broccoli stir-fry I’d made ages ago. What if, I thought, I could ramen-ize it? Thus, this recipe was born! It’s now a staple in our home, and I think you'll love it, too.

What makes this ramen so special? It’s all about balance. The umami-rich beef broth, the slight bitterness of the broccoli, the satisfying chew of the ramen noodles, and the savory-sweet sauce – they all dance together in perfect harmony. Plus, it’s endlessly customizable. Add a dash of sriracha for heat, a sprinkle of sesame seeds for texture, or an egg for extra protein. Get creative!

📖 Instructions

  1. Prep the Beef: Thinly slice 8 ounces of sirloin steak against the grain. This ensures tenderness. Marinate with 1 tablespoon of soy sauce, 1 teaspoon of cornstarch, and 1/2 teaspoon of ginger for at least 10 minutes. Trust me, this little step makes a huge difference!
  2. Cook the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated beef and stir-fry for 2-3 minutes, or until browned. Don't overcrowd the pan; cook in batches if necessary to get a good sear. Set aside.
  3. Steam the Broccoli: While the beef is cooking, steam 1 cup of broccoli florets until tender-crisp. This usually takes about 5-7 minutes. You can also microwave them with a tablespoon of water for 3-4 minutes. Just keep an eye on em’ so they dont get mushy!
  4. Prepare the Sauce: In a small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of brown sugar, 1 tablespoon of oyster sauce (or hoisin sauce for a vegetarian option), 1 teaspoon of sesame oil, 1/2 teaspoon of garlic powder, and 1/4 cup of beef broth. Taste and adjust seasonings as needed. Some ppl like it sweeter, some saltier – you do you!
  5. Cook the Ramen: Cook 2 packages of ramen noodles according to package directions. Discard the seasoning packet (we won't need it!). Drain the noodles well.
  6. Combine Everything: Add the cooked ramen noodles to the skillet with the beef. Pour the sauce over the noodles and beef, and toss to coat. Add the steamed broccoli and stir gently to combine. Cook for another minute or two, until the sauce has thickened slightly.
  7. Serve and Enjoy: Divide the ramen among bowls. Garnish with sesame seeds and chopped green onions, if desired. For an extra touch, top with a soft-boiled egg. I promise, you wont be dissapointed! Its SO GOOD!

📝 Notes

  • For a vegetarian option, substitute the beef with tofu or mushrooms and use hoisin sauce instead of oyster sauce.
  • Add a dash of sriracha for extra heat.
