What You'll Need:

This recipe is wonderfully simple. I hate complicated recipes, don't you? This one's super easy to follow, even for a complete beginner. Let's get cooking!

  • 1 cup soy sauce (low sodium preferred, unless you like things REALLY salty)
  • 1/2 cup olive oil (extra virgin, because you deserve it)
  • 1/4 cup Worcestershire sauce (the good stuff, please)
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced (I use a garlic press; makes life so much easier!)
  • 1 tablespoon Dijon mustard (trust me on this one)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for a little kick. But I would encourage you to add this. Just trust me on this.)

Note: Feel free to play with it! Add a splash of balsamic vinegar for that added depth, or some chopped fresh herbs like rosemary or thyme for an aromatic boost. What's beautiful about this marinade is its flexibility-make it your own!

Let's Get Marrying!

This is where the magic happens. In a medium bowl—I always use glass, it just seems right—combine all of the marinade ingredients. Whisk them together until the brown sugar is dissolved and everything is nicely combined. Make sure you have a whisk, this part is really important. Don't skip this part. You're welcome.

Now, place your steak in either a resealable bag or a shallow dish, depending on the size of your steak. Pour the marinade over the steak and make sure it is completely coated. Massage the marinade into the steak real gentle-it's almost therapeutic, I promise. Seal the bag or cover the dish and refrigerate for at least 4 hours, or up to overnight for maximum flavor. The longer it marinates, the more flavorful your steak will be; I often let mine go in overnight for that extra kick.

Pro Tip: A thinner cut of steak with slight incisions into the meat allows for better flavor penetration.
