Grandma Rosa's Sicilian Pizza: The Ingredients

This is no ordinary pizza recipe-this is a Sicilian pizza recipe. That means a thicker crust, a more robust flavor, and a whole lot of love baked in. Don't worry, it's easier than you think!

  • For the Dough:
    • 1 cup warm water (105-115°F)
    • 1 teaspoon sugar
  • 2 teaspoons active dry yeast
    • 2 1/2 cups all-purpose flour, plus more for dusting
    • 1 teaspoon salt
    • 2 tablespoons olive oil
  • For the Sauce:
    • 28 ounces crushed tomatoes
    • 2 cloves garlic, minced
    • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
    • Salt and pepper to taste
  • For the Toppings:
    • 8 ounces fresh mozzarella cheese, sliced
    • 1/2 cup grated Parmesan cheese
    • Your favorite toppings! (Grandma Rosa always used fresh basil, prosciutto, and olives.) Feel free to experiment, just dont' use pineapple, ew!

Dough to Delicious in Steps

Step 1: The Dance of the Dough. In a large bowl, put the warm water, sugar, and yeast, then let it sit about 5-10 minutes until it goes foamy.Magic happens; don't hurry! Add the flour, salt, and olive oil. Knead the dough to form a smooth, elastic one for about 8 to 10 minutes. If it feels too sticky, add a bit more flour. I love getting my hands dirty at this stage! Seriously, the feel of the dough is important. Trust me on this one.

Step 2: Sauce-sational. In a saucepan, combine the crushed tomatoes, minced garlic, oregano, basil, salt, and pepper. Bring to a simmer over medium heat and cook for about 15-20 minutes, stirring occasionally, until thickened. This sauce is the heart and soul of this pizza. Taste it along the way; adjust the seasoning to your liking.

Step 3: Assembly Line of Awesome. Preheat the oven to 450°F (232°C). Lightly grease a 9x13 inch baking pan. Roll out the pizza dough to fit the pan. Spread the tomato sauce evenly over the dough. Layer the mozzarella cheese and parmesan cheese over the sauce. Then, add your favorite toppings. Don't be shy! Get creative!

Step 4: Oven Magic. Bake for 20-25 minutes, or until crust is golden brown and the cheese is melted and bubbly. Keep an eye on it to make sure it doesn't burn. Every oven is a little different, and this may take a few trials for perfection.

Step 5: Slice and Savor! Let the pizza cool a few minutes before slicing and serving. Enjoy!
