  • 12 cups water
  • 2 carrots, roughly chopped
  • 2 celery stalks, roughly chopped

  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Place the chicken and water in a large pot. Bring to a boil, then reduce heat and simmer for about an hour, or until the chicken is cooked through.
  2. Pull the chicken out of the pot and let it cool slightly. Shred the chicken meat, discarding the skin and bones.
  3. Add the carrots, celery, and onion to pot and continue to simmer another 15-20 minutes, or until vegetables are tender.
  4. Stir in garlic, salt, and pepper.
  5. Add the egg noodles and cook according to package directions.
  6. Stir in the shredded chicken.
  7. Serve hot, sprinkled with chopped fresh parsley.

Level Up Your Broth: The Flavor Boosters

One time, I was making this soup for my family, and my daughter-she's a picky eater, bless her heart-asked if we could add some…wait for it…croutons. Yep. Croutons in chicken noodle soup. I almost choked on my own soup broth. But you know what? They were surprisingly delicious! So, if you feel like it, add the croutons! You can even add shredded carrots. Literally, anything.
