Now add in your diced tomatoes, vegetable broth, basil, oregano, salt, and pepper. Bring up to a low simmer, then reduce the heat to low and let it simmer for at least 30 minutes or longer if you want a really deep and rich flavor. The longer, the better-I swear, it is magic! Sometimes, when I have an hour to leave it on the stove, even better; it tastes super delicious and comforting.

Once the soup has simmered, carefully transfer it to a blender-or use an immersion blender-and blend until smooth and creamy. If you happen to use an immersion blender, it can be directly done in the pot-it means fewer dishes to wash, right? That's something Grandma Elena would have approved of. When you are using a blender, however, make sure not to fill it too high, and do always vent the lid just a little.

Stir in heavy cream or coconut cream until heated through, but be careful not to boil-this can curdle the cream. Taste again and adjust your seasoning if necessary. And remember-as grandma always said: Trust your taste buds. She was just so wise.
