  1. First, prepare your octopus. You want it finely diced, almost like a mince. Don't skimp here, it's the star of the show!
  2. Next, the batter. I whisk together flour, eggs, dashi, and water until I get a smooth batter that's not too thick, not too thin. Think pancake batter consistency.
  3. Now, the fun part! If using, I prepare my tempura bits, otherwise known as tenkasu. They add a lovely crunch!
  4. Grease that takoyaki pan well! Trust me, I've learned the hard way. Use a neutral oil with a high smoke point.
  5. Heat your pan over medium-high heat. Once hot, add a spoonful of oil to each mold.
  6. Pour a small amount of batter into each mold, about 2/3 full. You want space for the other ingredients, right?
  7. Quickly add a small piece of octopus, a few tempura bits (tenkasu) and some chopped green onions. We're building flavor!
  8. Use your takoyaki pick to carefully shape the batter around the octopus and other ingredients to form spherical balls. This takes a bit of practice—don't stress it if they are imperfect on your first attempt!
  9. Once the bottom is lightly browned, flip the balls using your takoyaki pick. You want them browned on all sides. This part requires patience and a steady hand.
  10. Keep flipping and rotating the takoyaki until they are fully cooked, golden brown, and the inside is completely set, about 8-10 minutes. Be cautious of burning!
  11. Carefully remove your takoyaki from the pan, and place them on a plate.
  12. Now for the fun part: Garnish them generously with takoyaki sauce, mayonnaise, aonori (dried seaweed flakes), katsuobushi (bonito flakes), and more chopped green onions. Go wild!
  13. Serve immediately and enjoy your freshly made takoyaki! They're best served hot.
