Why not share my secret, then, for making enchiladas that are so good, they disappear in minutes? Literally-not kidding! The kinds of enchiladas that would make you go back for seconds, third, and maybe a fourth. Do not judge! Now, are you ready to dive into some enchilada magic? Now is a great time!

One more thing: You need the right ingredients…and a little love.

Let's start with the basics. If you want enchiladas that rock, you need quality ingredients. I mean those ingredients that make your taste buds sing. Here's what you need to make my favorite enchiladas:

  • Corn Tortillas: You want those pliable, slightly soft tortillas that are easy to roll. I usually grab a pack of fresh corn tortillas from the grocery store because they do make a huge difference.
  • Chicken: I used shredded cooked chicken. You can actually make your own or you could just pick some up from the rotisserie section of the grocery store. Timesaver?
  • Cheese: I really like cheddar cheese because it's so melty and flavorful, but you can use Monterey Jack or Colby or whatever sort of cheese you like.
  • Sauce: Now here's where the real magic is. And by that, I don't mean some bottled thing; that's OK when you're in a hurry. A homemade sauce is what really elevates the flavor. Mix some canned diced tomatoes with spices like cumin, chili powder, and just a little oregano. The magic comes with the simmering. Let the flavors merge and form this incredibly tasty, thick sauce. You can add some broth if it's too thick. Toppings: Now we're talking, getting creative in a real way. I love a dollop of sour cream, a sprinkle of onions and cilantro, and perhaps a squeeze of lime on top of my taco. It all involves adding those layers of flavor and texture. There is a small pleasure in preparing these ingredients-one knows that something great will come out of it. This, over time, makes the whole process so much fun. So go ahead, get your ingredients ready, and let's start cooking!

Let's Get Rolling With the Tortillas, That Is!

Okay, so you've got all your ingredients ready. Now it's time to assemble those enchiladas! This is the part where things get fun. You're basically making edible little bundles of joy!

  1. Warm the tortillas: Briefly warm them up in a pan. You may use a microwave for a little bit, but I love a hot pan that keeps them soft and perfect. Don't overcook!
  2. Add the filling: Take a tortilla and add an extra generous scoop of chicken and cheese. Don't be stingy with those toppings-you want enough to make every single bite amazing!
  3. Roll 'em up: Now this is the part that can get a bit tricky. You're basically making a little burrito, rolling the tortilla up tight to enclose the deliciousness inside. You by no means have to be a master roller, but there's a little lee-way here. Long as it's filled and rolled, it's good to go!
  4. Place in baking dish: As you roll each enchilada, place them in a baking dish-seam side down. You want them to be close together but do not overfill the dish.
  5. Cover with sauce: Now here is my favorite part. Pour your delicious homemade sauce over the enchiladas, to make sure they are really well covered. You want every single enchilada drowning in that sauce.
  6. Top with cheese: Because everything is better with cheese, sprinkle some over the top of these babies to really make them shine. It's going to get all melty and gooey in that oven!

Isn't this already making your mouth water? You almost can smell the cheesy goodness as you get ready to throw those enchiladas in the oven!

Bake, Serve, and Enjoy-you're welcome!

Preheat your oven to 350 degrees Fahrenheit or 175 degrees Celsius. You know the drill. Bake those enchiladas for about 20-25 minutes or until they're heated through and that cheese is all bubbly and golden brown. Keep an eye on them so they don't burn.

You will have those enchiladas ready-irresistibly. Yes, they would have looked so good, so delicious, that they would disappear in minutes. And that is why they are called "enchiladas that disappear in minutes." Get it?

  • Enchilada Casserole: Layer this enchilada filling with a cornbread topping for a baked casserole that is sure to impress.
  • Pizza enchilada: I said it, folks! Enchilada filling as a pizza topping is a completely different way to go about making pizza.
  • Enchilada burritos: Put the enchilada filling inside a burrito and out the door you go with a delicious meal.
