A Little Story About Polenta Cakes

Let me relate for a moment the magic of polenta cakes. It was a very hot summer day, and I was helping my friend Sophia with her garden. We were starving and wanted something quick and easy to eat. Sophia made this easy recipe for polenta cake that she had learned from her grandmother, and it was a revelation! We munched them, chattering, and I knew right then and there that I had to share this gem with the world. So, here it goes-these polenta cakes have all the makings: gluten-free, easy to make, and so deliciously tempting. They are perfect for a light breakfast, a quick lunch, or even satisfying snack. And they are very versatile! You can top them with everything you want, from sweet fruit and maple syrup to savory cheese and herbs.

Ready to give them a try? We shall dive into the recipe!

Ingredients You Need

For this recipe, you actually do not require many things. Just a few simple things you might have in your pantry, and you are on a high way to get the polenta cakes.

Here's what you are going to need:

  • 1 cup coarse polenta
  • 1 ½ cups water
  • ¼ cup grated parmesan cheese (you can use any kind of hard cheese)
  • 1 teaspoon salt
  • 1 egg, lightly beaten (optional)
  • Olive oil or butter, to grease the pan

You may even have all of these ingredients in your pantry right now; if not, just go on a quick run to the grocery store.

So, while we are talking about ingredients, I just found out something cool about polenta. It actually originates from corn! So, those of you who like cornbread-you are going to like the polenta cakes. That is some seriously comforting earthy flavor.

Making the Polenta Cakes

Ok, let's cook!

  1. In a medium saucepan, whisk together water, salt, and parmesan cheese over medium heat until simmering.
  2. Whisk in the polenta until smooth.
  3. Reduce the heat to low and cook for about 5 minutes, stirring frequently, until the polenta thickens.
  4. Remove from heat; let cool slightly.
  5. Stir in the beaten egg, if using.
  6. Brush a shallow baking pan or muffin tin with olive oil or butter.
  7. Spoon the polenta mixture into prepared pan, filling about 2/3 full.
  8. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until golden brown and set.

I know, super simple. That is what makes these polenta cakes amazing! Perfect for a busy weekday evening, or a lazy weekend morning. They also make great meal prep-just make and bake them the night before and have a healthy, delicious breakfast ready in the morning.

Serving Your Delicious Polenta Cakes

Your polenta cakes are done, out of the oven, and looking great. Now what?

You can serve them either warm or at room temperature. They taste great on their own, but I just love adding a few toppings for added flavor and texture.

Here are a few ideas:

  • Sweet: Top with fruit, maple syrup, honey, or whipped cream.
  • Savory: Go for cheese, herbs, roasted vegetables, or a dollop of pesto.
  • Unique: Get creative with avocado, salsa, or even a fried egg!

You could also serve them with a side of salad, soup, or chili for a complete meal.
