A Soup-er Start

Let me tell you a story. Last winter, I had been fighting a nasty cold.  Utterly at my worst, I desired something warm, comforting, and, if possible, healthy-ish.  Chicken noodle, forget it - I was looking for something with a kick, something that didn't weigh me down but actually filled me up. That is when I came across this magnificent keto sausage and kale soup. It's been a lifesaver ever since-or should I say, health-saver? Seriously, it is so good, and you will love how easy it is to make.

Ingredients: What you'll need for this Keto Delight

This recipe is super flexible! Feel free to swap out sausage flavors or add veggies you love. But here's what I use:

  • 1 pound Italian sausage (removed from casings) - I prefer spicy, but mild works too!
  • 1 large onion, chopped – Don't cry! Use a good sharp knife.
  • 2 cloves garlic, minced – Because everything's better with garlic! 1 bunch kale, chopped, -Wash it good people trust me 4 cups chicken broth -Homemade, if you have the time, a great depth of flavor -but Store-Bought, works 1 (14.5 oz) can diced tomatoes -UNDRAINED-this just adds such nice acidity. 1 teaspoon dried oregano, always use more you know-a healthly pinch!! 1/2 teaspoon red pepper flakes OPTIONAL-for that bit of added heat!
  • Salt and black pepper to taste – Do not forget seasoning!

Directions: Let's Get Cooking!

This recipe is so easy, even I can make it – and that's saying something! Here's the step-by-step:

  1. Brown the sausage: In a large pot or Dutch oven, brown the sausage over medium-high heat, breaking it up with a spoon. This is the best part – the smell!
  2. Sauté the aromatics: Add the onion, cooking until softened, about 5 minutes. Then throw in the garlic; cook another minute, fragrant. Mmmmmm.
  3. Add in the rest of the ingredients: Stir in the kale, chicken broth, diced tomatoes, oregano, and red pepper flakes, if using. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the kale is tender. If too thick, add a bit more broth.
  4. Season to taste: Taste and season with salt and pepper. I always add just a bit more pepper, just because.
  5. Serve and enjoy: Ladle into bowls and enjoy! Serve with a side of crusty bread if you're not strictly keto for a truly satisfying meal. Or just eat it on its own, seriously, it's that good!

This has become my quick, healthy, delicious keto go-to soup. Full of flavor, it's filling but incredibly easy to make.
