But lately, I've been seeing so many questions popping up, like.is it really healthy? I mean, can a plant-based broth really give you the same nutritional punch as something with meat or bone broth? And is it, in fact, filling enough to be a meal? Let's take the plunge!

Busting the Myths: Is Vegan Soup Healthy?

First off, let's get rid of some of the general myths that surround vegan soups. There is this belief that vegan soup is something of a bland, tasteless, watery concoction. Not true! With just a little creativity, you can have in a bowl a delicious, flavorful, super-healthy meal.

Now, about the nutrition: I have been cooking for vegans for years now, and I have learned one or two things about how to get my body all the nutrients it needs. It is quite possible to eat healthy with vegan soup if one does it right.

Protein Power

Protein is usually what people think about when contemplating going vegan. But you'd be surprised how many plants are just loaded with protein! Think lentils, beans, chickpeas, quinoa, even leafy greens! Throw one or two of these into your soup, and you are all set! I like to throw in the lentils for a nice, tummy-friendly dose of fiber and protein. It really gives it a nice base and depth of flavor.

Iron Intake

Iron is another key nutrient, but the list of standouts for plant-based sources is very short. I add either spinach or kale to my vegan soups. They are high in iron, and in a creamy soup, you don't even taste them. It's also a good idea to add foods high in vitamin C, such as bell peppers or citrus fruits, because this can help with iron absorption!

Fiber Fanatic

The importance of fiber in the diet cannot be overstated. It has many digestive benefits and will keep you full longer. Vegan soups will provide a real dose of fiber when including legumes, for example, lentils and beans, whole grains, and vegetables such as carrots and celery. That's the thing with vegan soups-the possibility of loading them with a great deal of vitamins and minerals is endless! Just a little hint! Adding vegetables-when you saut those little guys in some olive oil before adding them to the pot-you get a lot of flavor out of them. And, you know, a little olive oil is always a good thing!

My Favorite Vegan Soup Recipes

Okay, now to the fun part! Below are some of my favorite go-to vegan soup recipes. In creating these recipes, I kept in mind the health-conscious individual, but they are also so flavorful and satisfying. Enjoy!

1. Creamy Tomato Basil Soup with Lentils

This is my go-to comfort food. It's chock full of fiber, protein, and flavor, and is surprisingly easy to make. You can use either fresh or canned tomatoes, and I like to add in a little extra olive oil and balsamic vinegar for a thick, complex taste.

  • Ingredients:
    • 1 tablespoon olive oil
    • 1 medium onion, chopped 2 cloves garlic, minced 1 tsp dried oregano 1 tsp dried basil 1 (28 oz) can crushed tomatoes 1 (15 oz) can diced tomatoes 1 c green lentils, rinsed 4 c vegetable broth
  • 1/2 cup chopped fresh basil, for garnish

  • Instructions:

    1. Soften the onion and garlic in the olive oil.
    2. Add in the oregano and basil and continue cooking another minute.
      1. Add the crushed tomatoes, diced tomatoes, lentils, and vegetable broth. Bring to a boil, then reduce heat and simmer for about 30 minutes or until the lentils are tender.
      2. Using an immersion blender, blend soup until smooth, or transfer soup to an ordinary blender and blend in batches.
      3. Season to taste with salt and pepper.
      4. Serve hot with fresh basil drizzled over the top.

2. Spicy Black Bean Soup with Avocado

This is one of those soups that's sure to please. Hearty, full of flavor, this soup gets a boost from the addition of avocado, which not only adds creaminess but a healthy dose of fat, too. You can adjust the spice level to suit your taste easily enough.

  • Ingredients:
  • 1 tablespoon olive oil
    • 1 medium onion, chopped
    • 2 cloves garlic, minced
    • 1 red bell pepper, chopped
    • 1 teaspoon chili powder
    • 1/2 teaspoon cumin
    • 1/4 teaspoon cayenne pepper (optional)
  • 1 (15-ounce) can black beans, rinsed and drained

    • 4 cups vegetable broth
    • 1 ripe avocado, diced
    • 1/4 cup chopped cilantro, for garnish
    • Lime wedges, for serving
  • Instructions:

    1. In the olive oil, sauté the onion, garlic, and bell pepper until softened.
      1. Stir in the chili powder, cumin, and cayenne pepper if using; cook a minute more.
      2. Add black beans and vegetable broth. Bring to a boil; then reduce heat, and simmer for 15-20 minutes.
      3. Stir in avocado, cilantro, and lime juice.
      4. Serve warm, garnished with additional cilantro.

3. Golden Lentil Curry Soup

Rich, fragrant, this soup packed with flavor and goodness. Another great way to take in all the goodness of turmeric and ginger. If you want, a little heat can be added with a pinch of cayenne pepper.

  • Ingredients:
    • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper, optional
  • 1 (15-ounce) can diced tomatoes
  • 1 cup green lentils, rinsed
  • 4 cups vegetable broth

    • 1/2 cup coconut milk
    • 1/4 cup chopped cilantro, for garnish
  • Instructions:

    1. Saute the onion, garlic, and ginger in the olive oil until softened.
    2. Stir in the turmeric, cumin, and cayenne pepper (if using), and cook for a minute more.
      1. Add the diced tomatoes, the lentils, and the vegetable broth. Bring to a boil, then reduce the heat and simmer for 25-30 minutes, or until the lentils are tender.
      2. Stir in coconut milk; heat through.
      3. Serve warm, garnished with cilantro.

Tips for Delicious Vegan Soup

  • Get Creative with Veggies: Experiment with new vegetables. Sweet potatoes, zucchini, mushrooms, or even broccoli can add a lot of flavor and nutritional power to your soup.
  • Extra Flavor: Always sauté your vegetables in a little olive oil before you add them in, for extra depth of flavor. You can always use a bouillon cube to give it that stronger flavor of broth.
  • Spice It Up: Depth to soup can be achieved by the usage of multiple spices. You can try using cumin, coriander, paprika, or even cayenne pepper for different flavor profiles.
