You simply tear off pieces of the injera to scoop up the stew. The combination of the tangy bread and the flavorful greens is what makes this dish so special. I find making injera at home a bit challenging, so I usually buy it from my local Ethiopian restaurant. However, if you're feeling adventurous, there are plenty of recipes online to guide you.   3. Sauté Aromatics: Heat the oil in a large pot or Dutch oven over medium heat. Add the chopped onion and garlic, and sauté until they are softened and fragrant, about 5-7 minutes. Be careful not to burn the garlic.
  4. Add Berbere Spice: Stir in the berbere spice paste and cook for another minute, allowing the spices to bloom and release their flavors. The aroma should be quite pungent at this stage. Watch out for burning!
