Ingredients:

  • 2 lbs cooked chicken breasts, shredded (rotisserie chicken is a lifesaver here!)
  • 1 cup Frank's RedHot Original Cayenne Pepper Sauce (or your favorite brand – I've experimented, and Frank's is my personal fave)
  • 1/2 cup ranch dressing (I use a good quality one—it makes a difference!)
  • 1 cup cream cheese, softened (Seriously, soften it; room temperature is your friend)
  • 1/2 cup shredded cheddar cheese, sharp is best, trust me on this one!
  • 1/4 cup shredded Monterey Jack cheese, adds such a nice creaminess
  • 1/4 cup chopped green onions, for that little bit of fresh zing
  • Optional: A pinch of garlic powder, for those who like a bit more kick *Optional: A dash of hot sauce, for extra heat!

Pro-tip: occasionally, I'll add some smoked paprika for the smokiness in an amplified degree. Try it-you shall see you won't get disappointed. And don't forget to taste test and adjust the seasonings when necessary!

Instructions:

  1. Preheat your oven to 350°F (175°C). Yes, you really do need to preheat—don't skip this step!
  2. In a large bowl, combine the shredded chicken, Frank's RedHot sauce, and ranch dressing. Mix well until the chicken is evenly coated. Okay, this is where you get to get a little messy and really coat the chicken in buffalo sauce. You'll thank me later!
  3. Mix in the softened cream cheese until it's fully integrated into the chicken mixture, smooth as butter. Well, this is where you want to break out the mixer, really helping everything to come together and speeding the process along quite a bit.
  4. Stir until cheddar and Monterey Jack are melted. I mean, who doesn't love cheese? Like, seriously smooth and melted cheese. This is not the time to be shy about the cheese!
  5. Fold in the green onions gently. Alright, this is the last step, and remember, it's a marathon, not a sprint. Be gentle; I don't want all of the pretty onions bruised!
  6. Pour it into an oven-safe dish. I use a 9x13 inch, but size it according to how much dip you're making. I always make extra 'cause leftovers are awesome!
  7. Bake for 20-25 minutes, or until bubbly and heated through. Do not overbake, or it gets super dry-we learned that lesson the hard way.
  8. Sprinkle extra green onions on top, if you're feelin' fancy, and serve with tortilla chips, celery sticks, or even crackers.

This dip is very versatile. I have served it at everything from casual Super Bowl parties-obviously!-to more formal gatherings. It always disappears in record time, which I find very satisfying. It's also great the next day-even better, some might say, although I might be a little biased!

  • Give it some spice: Throw in some of your hot sauce of choice. I use a little bit of jalapeño, myself.
