Finally, place the preheated potatoes in the oven and lay them out in a single layer, making sure they don't overcrowd-so let them have some breathing space. Roast for about 30-40 minutes; flip them midway. This way, they get the golden brown color and crispiness on all sides.

If you prefer smoky, roast them on a parchment-lined baking sheet. If you like them crisper, broil them for a couple of minutes towards the end of the baking time.
