A Slice of My Life (and a Recipe)

There's just something about a well-put-together pie, folks. The aroma is all it would take. I recall that on a certain rainy Tuesday-really, Tuesdays matter!-I had reached the point when everything was working against me, and work was acting as an enervator, and what I really wanted was. some comfort food. You know, a hot, cheesy, saucy hug, if you would. So, being sensible, I made a pizza. Not just any pizza, mind you. These were the results of years of messing around and happy mistakes. It's my default, my comfort food-my pizza perfection, if that is such a thing; it mostly is, save that one time I put jalapeños on by mistake.let's just say it was spicy! This is not a normal pizza recipe. This is my pizza recipe, and I sincerely hope you will enjoy it as much as I do.

Gather 'Round, Pizza Lovers!

Before we get started, let's talk ingredients. You'll need:

  • 1 cup warm water (around 105-115°F)
  • 1 teaspoon sugar
  • 2 1/4 teaspoons active dry yeast
  • 2 1/2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 2 tablespoons olive oil

For the sauce:

  • 1 (28-ounce) can crushed tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste

For the toppings: Well, this is where you get to be creative. But seriously, don't put pineapple on it. Unless you like that kinda stuff! I'm still recovering from that one time. Anyway, I suggest using:

  • 8 ounces mozzarella cheese, shredded
  • Your favorite toppings! (Pepperoni, mushrooms, onions, peppers - the works!)

Dough-ing it Right

Mix warm water, sugar, and yeast in a large bowl. Let it sit for about 5-10 minutes until foamy. If it doesn't get foamy, your yeast might be dead. RIP yeast. Get a new batch, this is serious business.

Then add the flour and salt to the yeast mixture. Mix until it forms a shaggy dough. Turn out onto a lightly floured surface and knead for about 5-7 minutes, until it's smooth and elastic. If too sticky, add just a bit more flour; but do not overdo, as nobody likes a dry pizza crust. Trust me on this one.

Lightly grease a large bowl and place the dough inside. Cover with plastic wrap and let rise in a warm place for about 1 hour or until doubled in size. The important part: Patience, young padawan!

Saucy Situation

While the dough is rising, let's make the sauce. In a saucepan, combine the crushed tomatoes, minced garlic, oregano, basil, salt, and pepper. Bring to a simmer over medium heat and cook for about 15-20 minutes, stirring occasionally. You want it to thicken slightly; it adds a rich, flavorful base to the pizza. Don't rush this part—good things take time! (unless you're really, really hungry.)

Topping Time!

Preheat your oven to 450°F (232°C). Once it has doubled in size, gently punch down the dough. On a lightly floured surface, roll out the dough into the thickness and shape of your desire. It can't be perfect, because honestly, we're not making prize-winning pizzas here. though I would probably tell you to enter into one if I didn't have a lot on my mind, haha. That would be really fun! Anyway. Move it onto a pizza pan or baking sheet.

Spread evenly over the dough, making a small border for the crust. Top with mozzarella cheese; then add your favorite toppings after that. Do not be skimpy; more cheese equals more happiness, simple math here.

Bake 'Til Golden Brown

Bake for 15-20 minutes-or until crust is golden brown and the cheese is bubbly and melted. Watch it, though. The oven might have its own mind set, and you may want to adjust according to it, as you know. But a check midway is better than never if you don't want some sort of burned pizza catastrophe.

Slice, Serve, and Enjoy!

Once it's out of the oven, give it a few minutes to cool before slicing and serving. There's just something so fulfilling about homemade pizza, fresh out of the oven, with your choice toppings.
