Making the Magic: Crust and Filling

The Crust: First things first, the crust. This is where the magic happens. In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. Gradually add the ice water, mixing lightly until the dough just comes together. Don't overmix! Wrap the dough in plastic wrap and chill for at least 30 minutes. This will prevent the butter from melting and make your crust extra flaky.

I always let it cool for at least 2 hours. It's hard, I know, but patience is key to a perfect pie, seriously. It tastes even better the next day, warmed up for a few seconds in the microwave.
