Spring rolls are one of my absolute favorite things! They're so fresh, light, and versatile – a perfect blend of textures and flavors. I always make a huge batch whenever I have guests over, especially if it's a warm spring or summer day. The bright colors and fresh ingredients always make them a huge hit. They're also remarkably easy to put together; even if you are a terrible cook, like my uncle, you'll still manage this!

What I love most about spring rolls is how customizable they are. You can add practically any vegetables or proteins you like, making each roll your own unique creation. I tend to stick to veggies to stay healthier; my friend, Jessica, who is a vegan, always adds some tofu or tempeh for extra protein and a different mouth feel. There's no wrong way to make them, really!

  1. First, prepare your filling ingredients. Wash and thoroughly dry all vegetables. Thinly slice the carrots, cucumbers, and bell peppers, and chop the fresh herbs (mint, cilantro, basil) as finely as you like. If using vermicelli noodles, cook them according to package directions, then rinse them with cold water to cool and prevent sticking. Set aside to drain.
  2. Next, get your rice paper ready. Fill the large bowl with warm water (not hot!). Dip each wrapper into the water for a few seconds, just until it softens. Don't soak them too long, or they'll become too fragile.
  3. Lay the softened wrapper flat on a clean, dry surface, such as a cutting board or large plate. Arrange a small amount of each filling ingredient in a line horizontally across the center of the wrapper, leaving about an inch of space at the edges.
  4. Now, gently fold the bottom edge of the wrapper over the filling. Then, fold in the sides, and finally, tightly roll the spring roll away from you from bottom to top, creating a neat cylinder shape.
  5. Continue this process until all the filling ingredients are used up and you've made all of your spring rolls. If some rolls aren't perfect, don't worry – the taste will still be amazing!
  6. Serve your spring rolls immediately with your choice of dipping sauce. This helps keep the rice paper nice and pliable.
  7. Enjoy your homemade spring rolls! They’re perfect for a light lunch, a tasty appetizer, or a refreshing snack any time of day. You might even get brave and try making your own sauce sometime!

  • For extra flavor, you can add some cooked shrimp, chicken or pork.
