I created this recipe after a disastrous attempt at making sushi. Yes, that's right, it went totally wrong! I needed a simpler way to use up the leftover chicken and veggies, so I went for spring rolls. Turns out, much easier and so much more fun to make!   1. First things first, prep your veggies! Wash, peel (if needed), and slice your carrots, cucumbers, and bell peppers into thin matchsticks. Think about 3-4 inches long—easy to roll!
  2. Next, get that chicken ready. If using rotisserie chicken (my personal shortcut!), shred it into strips. If cooking it yourself, make sure it's fully cooked and shredded before we move on.
  3. Now for the rice paper. Fill a large, shallow dish with warm water. Don't make it too hot—lukewarm is ideal. We'll dip our rice paper wrappers here.
  4. Let's assemble! Lay one rice paper wrapper on a clean, dry plate or surface. Quickly dip it into the warm water for just a few seconds, making sure to wet the whole wrapper evenly. This will soften the rice paper.
  5. Place the softened rice paper flat. Arrange a few strips of chicken and vegetables in the center, leaving a little space at the edges.
  6. Roll it up! Starting at the bottom, gently fold the rice paper over the filling, tucking in the sides to create a tight roll. It might take a little practice, but soon you'll be a spring roll-rolling pro!
  7. Repeat the process. Keep going till you use all the rice paper wrappers. I usually make a whole batch— they’re perfect for sharing (or a quiet night in!)
  8. Finally, the hoisin sauce. If you’re feeling fancy, make your own— there are tons of recipes online. If not, a store bought version works just fine. Serve your spring rolls with the sauce and enjoy!
