  1. Preheat your oven to 400°F (200°C). Make sure your tartlet pans are ready and waiting!
  2. If making your own puff pastry (and kudos to you if you are!), follow your chosen recipe. Otherwise, thaw store-bought puff pastry completely according to the package directions. Seriously, don't skip this step; it'll make a big difference!
  3. Roll out the puff pastry to about 1/8 inch thickness. Gently press it into your tartlet pans, making sure to fill the bottom and sides completely. Trim any excess pastry.
  4. Now for the ratatouille! Dice your vegetables: eggplant, zucchini, bell peppers (any color you like!), and onions. I usually aim for roughly 1/2-inch cubes. This ensures even cooking.
  5. Heat 2 tablespoons of olive oil in a large pan over medium heat. Add the onions and cook until softened, about 5 minutes. Now toss in the eggplant; let that cook until it’s slightly softened, like 5 more minutes.
  6. Stir in the zucchini and bell peppers and cook until they are tender-crisp, another 5-7 minutes. Season generously with salt, pepper, thyme, and a pinch of red pepper flakes for a little zing.
  7. Add the crushed tomatoes, simmering gently for about 10-15 minutes, or until the sauce has thickened slightly and the vegetables are completely cooked. I like to give it a taste here. Adjust the seasoning to your personal preference. You don't want it too bland!
  8. Spoon the ratatouille into the prepared puff pastry tartlet shells. Don't overfill them – leave about 1/4 inch of space at the top.
  9. Sprinkle grated Gruyère cheese over the ratatouille. If you don’t have Gruyère, use something you like; that’s the beauty of cooking, it's about YOU!
  10. Bake for 20-25 minutes, or until the puff pastry is golden brown and the cheese is melted and bubbly. Keep an eye on them, ovens vary in temp!
  11. Let the tartlets cool slightly in the pans before carefully removing them. Serve warm and enjoy! They are amazing! Seriously. Amazing.
