Once the time's up, gently squeeze out as much liquid as you possibly can. I usually use a clean kitchen towel for this step. Its much better than just letting the water drip out, you’ll get a much better final product!
  2. Next, the stars of the show – the feta and mint! Crumble the feta cheese. If you like super chunky feta, go for it. I like mine to be more finely crumbled; it mixes better and tastes more evenly spread. Finely chop the fresh mint leaves. Don't over chop; you want to see little flecks of green for great visual appeal.
  3. In a medium-sized mixing bowl, combine the drained cucumbers, crumbled feta, and chopped mint. Add the Greek yogurt, red wine vinegar, garlic, and olive oil. Using a whisk, gently combine all the ingredients until everything is well incorporated. Try to avoid over-mixing; we don't want to beat it to death! You want a creamy, yet slightly textured tzatziki. Taste and adjust the seasoning as needed; maybe you want a bit more vinegar or salt. Its all up to your taste.
  4. Once you are happy with the flavor, cover the bowl and place it in the refrigerator for at least 30 minutes. If you want to be extra fancy (and I totally encourage you to be) let it chill for an hour or two. This allows the flavors to meld together beautifully. Trust me, this extra time is worth it! The flavors are way more blended.
  5. And that's it! Your homemade tzatziki is ready to be enjoyed! It's delightful on its own with pita bread, or as a topping for grilled meats, falafel, or even your favorite veggies. I have a friend who loves it on fries. Get creative, people!
