Here is the magic: super, super easy, and I really mean it-even if, well, some of those earlier attempts failed-ahem, that chili garlic sauce.

  1. Boil the noodles: Cook the noodles in accordance with package directions; however, do not overcook! We like them al dente; that's where it has that little "oomph".
  2. Whisk the sauce: While noodles are cooking, in a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey/maple syrup, sriracha, sesame oil, and minced garlic. Now, it's magic time here. Add a splash of water if it's too thick. You can't add more sauce later.
  3. Fold and throw: After cooking the noodles, strain them, then add them to the sauce in the bowl. Mix well until the noodles are coated. If it looks a bit dry, then add a bit more water or a tablespoon of oil.
  4. Garnish and serve: Sprinkle with chopped cilantro and chopped peanuts, if using. Serve immediately. If you want to be extra fancy, squeeze some lime juice on top before serving. It adds such a lovely fresh kick. Enjoy!

  • Spice level: Seriously, start small with the sriracha. You can always add more, but you can't take it away. Trust me on this one.
  • Peanut butter consistency: Smooth or crunchy, whichever. Just make sure it's not old enough to have separated. Stir it well before adding it to the sauce.
  • Don't overcook the noodles!: It's an easy mistake to make, and it's the worst textural mistake you can make! Follow the directions on the package, and then maybe even cook them for slightly less time.
  • Leftovers: Allow leftovers to cool. Store in an airtight container in the fridge. Even better the next day-if any are left!.
  • Get creative: By all means, play with other vegetables or a source of protein. Chopped carrots, sliced bell peppers, or even some cooked chicken would be great inclusions. Go nuts!
