Ingredients: What You'll Need

  • 1 block (14 ounces) extra-firm tofu, pressed and crumbled (This is important! Pressing removes excess water for a better texture. You can find tons of tutorials online if you're unsure how to do this.)
  • 1/2 medium onion, chopped (I prefer red onion for its sharpness, but yellow works fine too.) • 1 bell pepper, chopped (any color) (Adding a little color and crunch is fun, right?) • 1 cup sliced mushrooms (Mushrooms will add a nice umami depth of flavor to your scramble.) • 2 cloves garlic, minced (A little garlic goes a long way!) • 1 tablespoon olive oil (Or your favorite cooking oil.) • 1 teaspoon turmeric (For that beautiful yellow color and a subtle earthy flavor.)
  • 1/2 teaspoon nutritional yeast (This is what makes it cheesy. Don't knock it till you try it!)
  • Salt and pepper to taste (Seasoning is everything— experiment!)
  • Optional: Spinach, tomatoes, other veggies! (Get creative and add your favorite veggies.)

Directions: Let's Get Cooking!

  1. Prep your tofu: Press the tofu to remove excess water. Crumble into a bowl.
  2. Sauté the vegetables: Heat some olive oil in a pan over medium heat. Add the onions, bell pepper, and mushrooms and sauté until they start to soften, about 5-7 minutes. Add the garlic and cook for another minute, stirring constantly, until fragrant. This is normally when I put on some music and sing while I cook poorly—my special ingredient, lol!
  3. Add tofu: Add the crumbled tofu and cook for about 5-7 minutes, breaking it up with a spatula.
  4. Spice it up: Stir in the turmeric and nutritional yeast. Season very well with salt and pepper. Remember, you can always add more seasoning, but you can't take it away. So start slow!
  5. Optional add-ins: If using spinach or other leafy greens, add now. Cook until wilted. (I almost always use frozen spinach because it's always on hand. Super convenient.)
  6. Serve it up: Serve your tofu scramble hot. Enjoy on its own, with toast, or as a filling for burritos or wraps. So many choices!
