A friend just would not stop raving about how effortless it was to make the paella in hers, and well, that sparked my interest. So, I took the leap into the world of Instant Pot paella, if somewhat with caution, and let me tell you-something out of this world. This is perfect for either busy weeknights or lazy Sundays-you decide!

What You'll Need: Ingredients for Authentic Paella Flavors

Okay, okay, let's get down to the best part of cooking-after eating, that is-getting all the ingredients together. It's like going on a culinary treasure hunt! For this Instant Pot Paella, you will be needing:

  • 1 tablespoon olive oil: For goodness' sake, use good quality olive oil. Trust me on this one. Don't even think about using vegetable oil!
  • 1 cup Arborio rice: This is the star of the show for paella; it has that perfect creamy texture. Don't substitute unless you really, really know what you're doing.
  • 1 onion, chopped: I use yellow onions, but white or red would work too. It's all about preference here.
  • 2 cloves garlic, minced: That is where that lovely punch of flavor comes in. Do not be shy! Fresh is best; the pre-minced stuff just isn't the same.
  • 1 red bell pepper, chopped: Adds a bit of sweetness and color. Do not skip it; the color is for the paella!
  • 1 cup chicken broth: Low sodium is best to control the saltiness.
  • 1/2 cup dry white wine: Adds a touch of elegance to the dish. Use whatever you would drink; you are going to taste it in the paella.
  • 1/2 teaspoon saffron threads: Saffron is what gives paella that beautiful golden color and distinctive flavor. A pinch of turmeric is ok if you cannot find any saffron.
  • 1/4 teaspoon smoked paprika: This adds a nice smoky depth. Get this one, you wont regret it.
  • 1/4 teaspoon cayenne pepper (optional): If you like a little kick, add a pinch of cayenne.
  • 1 cup frozen peas: These are a nice last minute addition. Add some other veggies if you prefer.
  • 1/2 cup cooked chicken, shredded: Rotisserie chicken makes this super easy!
  • Salt and pepper to taste: Season to your liking. Make sure to taste the food!

Cooking Your Instant Pot Paella: A Step-by-Step Guide

Place your Instant Pot on "Sauté" mode. Put in the olive oil and sauté the onion until it becomes soft. Add the garlic and bell pepper and sauté for another 2-3 minutes, making sure the vegetables get a nice color.

Next, add rice, saffron, smoked paprika, and cayenne pepper, if using. Stir for one minute constantly. This will add flavor and color to your dish.

Add chicken broth and white wine now. Stir to combine. Add chicken and frozen peas into the pot and stir well. Close the lid by setting the valve to "Sealing".

Cook on high pressure for 5 minutes and let the pressure naturally release for 10 minutes. After which, carefully quick-release whatever pressure may be left behind. Stir it gently with a fork to fluff the rice out. Season with salt and pepper according to your taste. Let it sit for a minimum of five minutes and absorb!

And that is it! Your delicious Instant Pot Paella is ready for consumption. Really, I have done a lot of experiments over this recipe, and honestly, it keeps getting better and better!

Serving and Enjoying Your Masterpiece

Serve immediately. This is one of those dishes that is best served fresh and hot. Sprinkle with a sprig of parsley or a few lemon wedges, if desired. The flavors meld together nicely, and the rice is cooked just right. Feel free to add some chorizo or shrimp for added flavor-a little something extra never hurts!

I served mine with a simple side salad and a glass of chilled white wine-of course! My family absolutely loved it. Trust me on this, it will be the hit of everything. The whole experience feels so much more special than just a meal. It's a little moment of joy in our busy lives.
