We were staying in a small coastal town, the sun was setting, and I bit into the most incredible taco I'd ever tasted in my life. It had this sweet and savory thing going on, and I was determined to recreate it back home. This recipe is my attempt to capture that magic. It's fresh, exciting, and surprisingly easy to make—even for a somewhat clumsy cook like myself!

  1. First things first, let's get that chicken marinating! In a large bowl, whisk together the soy sauce, lime juice, olive oil, brown sugar, garlic, ginger, and a pinch of red pepper flakes. Season generously with salt and pepper. Add the chicken to the bowl, ensuring every piece is coated in that delicious marinade. Cover the bowl and pop it in the fridge for at least 2 hours, or even better, overnight. The longer it marinates, the more flavorful it will be!
  2. Now, let's prepare the pineapple. Preheat your grill to medium-high heat. Peel and core the pineapple, then cut it into 1-inch thick slices. Grill the pineapple for about 2-3 minutes per side, until it develops beautiful grill marks and slightly caramelizes—Mmm, delicious!
  3. Time to grill the chicken! Remove the chicken from the marinade and place it on the preheated grill. Grill for about 4-5 minutes per side, or until the chicken is fully cooked and slightly charred. Remember, don't overcrowd the grill; work in batches if necessary.
  4. While the chicken is grilling, warm your tortillas. You can warm them in a dry skillet over medium heat, or even directly on the grill for a smoky flavor. Just a minute or two per side, until they are warm and pliable.
  5. Almost there! Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Then, slice or shred the chicken into bite-sized pieces. Now, assemble your tacos! Place a warm tortilla on a plate, add a generous portion of grilled chicken, top with a couple of grilled pineapple slices, and finish with a sprinkle of chopped cilantro and a squeeze of fresh lime juice. Don't forget a little extra salt and pepper if desired. Repeat with the rest of the tortillas and ingredients.
  6. Serve immediately and enjoy your amazing Grilled Pineapple Chicken Tacos! They are best enjoyed fresh off the grill, but honestly, they're still pretty darn good the next day too. I promise :)
