  1. Preheat your oven to 350°F (175°C). This is super important for even baking!
  2. In a large mixing bowl, combine 2 cups (250g) all-purpose flour, 1 cup (200g) granulated sugar, and 1 teaspoon of baking powder. Give it a good whisk to make sure everything is evenly distributed.
  3. Cut in 1 cup (2 sticks) of cold, unsalted butter using a pastry blender or your fingers. You want to work quickly here so the butter stays cold and creates flaky crumbs. It should resemble coarse crumbs.
  4. In a separate bowl, gently mix together 2 cups (400g) fresh or frozen lingonberries (thawed if frozen), 1/4 cup (50g) all-purpose flour, and 1/4 cup (50ml) of lemon juice. The lemon juice brightens up the berry flavors tremendously!
  5. Pour the lingonberry mixture into the flour and butter mixture. Gently combine until just mixed. Don't overmix; a few lingonberries left whole is perfectly fine (and adds nice texture!).
  6. Pour the crumble mixture into a greased 8x8 inch (or similar-sized) baking dish. Spread evenly.
  7. Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, loosely cover it with foil.
  8. Let the crumble cool completely in the baking dish before serving. This allows it to set up properly. This is harder than you might think!
  9. Dust with powdered sugar and garnish with fresh lingonberries before serving (optional, but highly reccomended).

📝 Notes

  • Use fresh or frozen lingonberries; thaw frozen berries before using.
  • For a spicier kick add 1/2 teaspoon of cinnamon to the dry ingredients.
  • Feel free to experiment with other berries, such as cranberries or raspberries. But lingonberries are the best, I think!
