    • 2 cups shredded cheddar cheese the sharper, the better!

**Step 1: The Beefy Base The first thing to do is get that yummy beef filling going. In a big skillet, heat the olive oil over medium-high. Throw in the onion and cook until soft, about 5 minutes. Toss in the garlic and cook an additional minute until fragrant. Now add in the ground beef, breaking it up as it cooks. Drain off any excess grease. Stir in the canned tomatoes, chilies, chili powder, cumin, oregano, salt, and pepper. Simmer for about 15 minutes, allowing the flavors to meld together. This is where the real magic happens, people. **Step 4: Sauce and Bake Place the enchilada sauce on top of the enchiladas and cover well. Sprinkle the rest of the cheese on top. Bake for 20-25 minutes or until the cheese is melted, bubbly, and golden brown. The moment of truth, my friends! Aren't you excited? I know I am!
