A delicious rosemary and egg scramble in a skillet, garnished with fresh rosemary sprigs
This Rosemary and Egg Scramble is my go-to breakfast when I need a little somethin’ somethin’ extra special. It’s super simple, but the fresh rosemary adds a delightful, almost unexpected, punch of flavor. Trust me, it elevates a basic egg scramble to a whole new level of deliciousness. It's also incredibly versatile! You can adjust the amount of rosemary to your liking. I am a rosemary fiend, so I use a fair bit. But you do you!

I first discovered this recipe during a weekend trip to my friend’s cabin. We were all super hungry and looking for a quick, but delicious meal, and this was it. The aroma of fresh rosemary cooking was heavenly! It's the kind of recipe that makes people go 'Mmmmmm' immediately. I even made it at a brunch I hosted last week, and everyone absolutely adored it.

📖 Instructions

  1. First, grab your 9-inch nonstick skillet and place it over medium heat. Let's get cooking!
  2. Next, add 1 tablespoon of butter to the skillet. Once melted and shimmering, add 1 teaspoon of fresh rosemary. Cook this for about 30 seconds, or until fragrant; don't let it brown too much!
  3. In a small bowl, whisk together 3 large eggs with a pinch of salt and black pepper. Remember, good seasoning is key!
  4. Once the rosemary is fragrant, pour the egg mixture into the skillet. Let it sit undisturbed for about 30 seconds so it can begin setting.
  5. Now, gently push the cooked edges of the eggs towards the center, tilting the pan to allow the uncooked egg to flow underneath. Continue this process until the eggs are mostly set but still slightly moist.
  6. Remove the skillet from the heat just before the eggs are completely cooked. They’ll continue to cook from the residual heat. This is important for achieving that perfectly tender scramble!
  7. Finally, fluff the scramble with a spatula. Garnish with an extra sprig of fresh rosemary and serve immediately. Enjoy!

📝 Notes

  • For a richer flavor, use unsalted butter and adjust the salt to your taste. Don’t be shy with the pepper!
