Last summer, I was invited to a beach bonfire party. One of my friends brought these incredible grilled shrimp skewers, and they were an instant hit. Everyone was raving about them! Inspired, I decided to recreate them at home, and after a few tries, I perfected this recipe. It's ridiculously easy and SO flavorful. The combination of cumin and lime is a match made in heaven; honestly, it's divine!

  1. First things first, let's get those shrimp ready! Rinse 1 pound of shrimp under cold water and pat them completely dry with paper towels. This is super important for nice grilling!
  2. Next up, the marinade! In a medium-sized bowl, whisk together 1/4 cup of lime juice (about 2 limes worth), 2 tablespoons of olive oil, 1 tablespoon of ground cumin, 1 teaspoon of chili powder, 1/2 teaspoon of garlic powder, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Don't be shy with the cumin; it's the star of the show!
  3. Now, gently toss the shrimp in the marinade, ensuring each one is nicely coated. Let them hang out in the marinade for at least 30 minutes, or longer if you're feeling patient. Thirty minutes is usually enough though. Refrigerate during marinating.
  4. While the shrimp are marinating, prepare your skewers. Soak wooden skewers in water for at least 30 minutes to prevent burning on the grill. If using metal skewers, you can skip this step.
  5. Once the shrimp are marinated and the skewers are prepped, thread the shrimp onto the skewers. I usually do about 4-5 shrimp per skewer, but you can adjust this to your preference.
  6. Preheat your grill to medium-high heat. Once it's hot, add the skewers to the grill. Grill for 2-3 minutes per side, or until the shrimp are pink and cooked through. Don't overcook them, or they'll become tough!
  7. Remove the skewers from the grill and let them rest for a minute or two before serving. Garnish with fresh cilantro or lime wedges, if desired. I love to squeeze a little extra lime juice on top just before eating... oh my!
  8. Serve these beauties immediately and enjoy! They're amazing on their own or as part of a larger meal. Seriously, these are so good, they'll make you want to do a little celebratory dance!

📝 Notes

  • Make sure your shrimp are completely thawed before marinating and grilling. Also, adjust the amount of chili powder to control the level of spiciness to your liking. Have fun experimenting with different spices too!
