Poaching eggs can be intimidating, I get it. But honestly, it is not rocket science. Here presenteth my secret: a splash of vinegar. Seriously, it makes all the difference! It helps the egg whites set nice, and you get perfectly formed poached eggs every single time.

  • Ingredients: 2 large eggs, 1/4 cup white vinegar, salt to taste
  • Method: Bring a small saucepan of water to a gentle simmer. Add the vinegar – that's the important part, remember! – and a pinch of salt. Use a spoon to create a whirlpool in the water. Crack an egg directly into the centre of the whirlpool. Cook for 3-4 minutes, or until the whites are set and the yolk is still runny. Drain with slotted spoon. Do it again with remaining eggs. DO NOT OVERCOOK. You will end up with tough, rubbery eggs.

English Muffins: To Toast or Not to Toast?

Well, this is actually a matter of personal preference. Some people like their English muffins lightly toasted, others like them a bit crispy. Normally, I toast mine lightly until they're just warm and slightly firm-that way, they can hold up the deliciousness without getting soggy from the hollandaise. It's all about the texture here!

Now the fun part-assembling! Place the toasted English muffins on your plates. Place a slice of Canadian bacon-on top of each muffin-or ham, if that is your jam.
