My Crispy Tortilla Quest: A Personal Story

Gather 'round, folks, I've been on a quest. A quest for the perfect crispy tortilla for my wraps. I'm talking that satisfying crunch, that delightful snap. you know the feeling? For years, I wrestled with soggy, limp tortillas that left my wraps a sad, soggy mess. You aren't going to have to raid the pantry for this recipe. Just a few simple ingredients most likely sitting in your kitchen at this very moment! I mean, come on, it's tortillas!

  • 12 corn tortillas (or flour, your choice!)
  • 2 tablespoons of vegetable oil (or avocado oil, if you’re fancy)
  • A pinch of salt (because, balance)

That's it! Seriously. No hidden ingredients, no magic potions, just pure tortilla goodness.

How to Get Them Crispy Perfect: Directions

I swear, it is not rocket science. Still, there is somewhat of a technique to make those tortillas crispy, and I have learned that the hard way! Like, years of frustration, folks. Years!

  1. Heat it Up: Place a large skillet over medium-high heat. Add your oil in it. Let it get hot for a minute or two, till it shimmers. Patience, my friend! Impatience is the enemy of a crispy tortilla.
  2. Fry time: Very carefully put two tortillas into hot oil, not over crowd. Seriously, crowning is a recipe for disaster! Take it from the Horse's mouth!
  3. Press and flip: Spatula it and press down for around 15-20 sec so it heats evenly and gets a crunch. Flip it back to do the other side.
  4. Crispy Check: They're done when they reach golden-brown spots; that is the indication that they get to their crispiest. If not, leave for another 10 seconds.
  5. Drain and Stack: Using tongs, carefully remove the tortillas, placing them on a plate lined with paper towels, to remove excess grease. I also found that stacking them on a wire rack helps further with draining.
  6. Repeat: Follow the process from steps 2-5 until your tortillas are all wonderfully crunchy.

Tips and Tricks for Extra-Crispy Tortillas

  • Warm your tortillas: If your tortillas are a little cold straight out of the package, just warm them up a little bit before frying. It improves the crisping process considerably.
  • Don't overcrowd the pan: Give your tortillas room to get crispy. Overcrowding will make them soggy.
  • Play with oils: If you're feeling adventurous, try other oils, like coconut oil. I personally find that coconut oil adds a nice subtle flavor, but it's all up to your preference.
  • Keep them warm: If you’re making a big batch, keep your crispy tortillas warm in a low oven (around 200°F) to maintain that perfect crispness. Otherwise they might get a little soggy!
