Last Easter, my family decided to forgo the ham and try something new. My aunt, bless her heart, attempted a truly ambitious seven-layered dip that somehow ended up looking like a Jackson Pollock painting. It was.an experience. But it taught me a valuable lesson: Sometimes, simpler is better. This year, I'm going for delicious and festive, but with a whole lot less mess. Below is my foolproof recipe for a gorgeous, and surprisingly easy, Easter brunch casserole that's sure to impress even the pickiest eaters-and definitely less likely to resemble abstract art!.

Spring into Flavor: The Ultimate Easter Brunch Casserole

This isn't your grandma's casserole. unless, of course, your grandma was a culinary genius! This casserole's all about the bright, fresh flavors of spring that seem to sing sunshine and new beginnings. Heavy carb-laden dishes begone, this one's lighter, brighter, perfect for a celebratory brunch!. Plus, it's mostly make-ahead, so you can actually enjoy your Easter morning instead of spending it slaving over a hot stove. You'll be thanking me later. Trust me on this one. What You'll Need:

  • 1 pound asparagus, trimmed

  • 1 red bell pepper, diced
  • 1/2 cup crumbled feta cheese
  • 1 cup shredded Gruyere cheese
  • 4 large eggs
  • 1 cup milk or cream (I use half-and-half for extra richness)
  • 1/4 cup chopped fresh chives
  • Salt and freshly ground black pepper to taste
  • 1 (14.1-ounce) can artichoke hearts, drained and chopped (I buy the ones in water, not oil)
  • 8 slices of sourdough bread, lightly toasted and cut into 1-inch cubes
  • 2 tbsp. olive oil Optional Add-ins (Because why not?):

  • A handful of cherry tomatoes, halved-for color!

  • Some diced ham or bacon, cooked and crumbled-for a little extra protein

  • A sprinkle of everything bagel seasoning-for that extra oomph

Let's Get Cooking! -It's Easier Than You Think!-

  1. Preheat and Prep: Preheat oven to 350°F - 175°C. Lightly grease a 9x13 inch baking dish. I always use my trusty ceramic one, but any will do.
  2. Sauté the Veggies: Heat olive oil in a large skillet over medium heat. Add asparagus and bell pepper; cook until tender-crisp, about 5-7 minutes. Don't overcook them, or they'll be mushy. No one wants mushy veggies in their brunch casserole.
  3. Assembly: In a very large bowl, whisk the eggs, milk or cream, chives, salt and pepper together until well combined. Then fold in asparagus and bell pepper, cooked, feta cheese, Gruyère cheese, artichoke hearts and bread cubes. You want the bread soft but not too soggy to retain some of its texture.
  4. Bake It: Pour the mixture into the prepared baking dish. Bake for 30-35 minutes, or until golden brown and set. Let it cool for 10 minutes before serving. I swear, it's easier than you think, and it impresses!

Serving Suggestions and Easter Brunch Bliss

Serve the casserole warm, accompanied by fresh fruit salad and mimosas-my God, for the adults only, of course! It's also great with a side of crispy bacon or sausage. Honestly, this dish is just so versatile; you can easily mold and shape it to fit your tastes and preferences. You want to add some smoked salmon? Go for it. Some extra herbs? Sure thing-why not!
