Easter brunch? Waffles all the way! And this year, I'm really bringing it with a recipe I've concocted after lots of trial and error-and some kitchen flops, if I can be totally honest! It's one of those recipes that takes that comforting classic, the waffle, and turns it into something magical for Easter. Impress your family and friends with just how airy and full of flavor these unbelievably fluffy and flavorful waffles are. Trust me, they're worth it! My picky nephew, who usually only eats chicken nuggets, scarfed these down. He practically was licking the plate afterward.

The Secret to Extra Fluffy Waffles

Okay, so I've tried a million waffle recipes. Some were dense and sad, while others were way too sweet. This recipe avoids those extremes. The secret? A little bit of buttermilk. It provides a tangy depth of flavor and those beautifully airy pockets of perfection in your waffles. And do not be stingy with the leavening agents, my friend-baking powder and baking soda are your best buddies here. They are responsible for the rise, the fluffiness-you know, the works!

Ingredients You'll Need:

  • 2 cups all-purpose flour-I use Gold Medal, but any good brand will do
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups buttermilk-shake the carton before using, you know, the milk has a mind of its own sometimes
  • 1/4 cup melted unsalted butter-let it cool slightly, you don't want to cook the buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Optional: Easter sprinkles! Because why not?!

Let's Get Wafflin'!

  1. Whisk the dry: Whisk flour, sugar, baking powder, baking soda, and salt in a large bowl, till it's really combined.
  2. Combine wet ingredients: In a separate bowl, whisk the buttermilk, melted butter, eggs, and vanilla extract together. Do not overmix the batter! It is so tempting, I know! But resist!. You know how much I love baking, and this is one of my tricks for getting that perfect result.
  3. Fold in gently: Wet ingredients are gently poured over dry ingredients. Fold them using a spatula until just combined; a few lumps are just fine, so do not overmix!
  4. Cook 'em up: Heat the waffle iron to your liking according to the manufacturer's instructions. Grease the iron if necessary. Using a 1/2-cup measuring cup, pour the batter onto the hot waffle iron. Shut and cook for about 3-4 minutes or until golden brown crispy. You want it perfectly cooked, not burnt!
  5. Serve and enjoy: Immediately serve your delicious waffles with favorite toppings such as fresh berries, whipped cream, maple syrup, chocolate chips, or whatever your heart wants. You know how much I love trying new things! I like to add some easter sprinkles just for the aesthetics.

Pro-Tips and Troubleshooting:

  • If your waffles are browning too much, your waffle iron is too hot. It they're not getting brown, turn the heat up a smidge.
  • Do not overmix the batter! This will make the waffles tough. Mix only until the ingredients are combined.
  • If your batter is a bit too thick, then add a tablespoon or two of buttermilk at a time until it reaches the consistency you like. Leftover waffles can be stored in an airtight container at room temperature up to 2 days, or in the freezer for up to 3 months.
