  1. First, let's smoke that Monterey Jack! If you have a smoker, set it to 225°F (107°C) and place the cheese, wrapped loosely in foil, inside. Smoke for about 30 minutes, or until slightly softened and infused with smoky flavor. If you don't have a smoker, no worries, just skip this step. (You're not missing out on too much... ok maybe you are ;).
  2. While the cheese is smoking (or not), prepare the avocado mash. Mash an avocado in a bowl, adding a squeeze of lime juice, salt, and a pinch of cumin. Stir well to combine. Taste test this! Make sure it's yummy!
  3. Next, finely chop some red onion, cilantro, and jalapeño (optional, but adds a nice kick!). I like to wear gloves when I chop jalapeños, because those little guys can pack a punch!
  4. Now for assembly! Warm up your large burrito tortillas (I love to do this in a dry skillet over medium heat - yum). Lay the tortillas flat.
  5. Evenly spread a layer of avocado mash on the center of the tortilla, leaving a border for easy wrapping.
  6. Place the smoked (or unsmoked) Monterey Jack cheese on top of the avocado. Add those chopped red onions, cilantro, and jalapeño if you're feeling brave.
  7. Carefully fold in the sides of the tortilla, then fold up the bottom edge over the filling, and tightly roll up the burrito like you're wrapping a present, but much more delicious.
  8. Heat a large skillet over medium heat. Add a little olive oil (or your favorite cooking oil). Place the burrito in the skillet and cook for 2-3 minutes per side, or until heated through and slightly browned. Keep an eye on them, so they don't burn! Those smoky flavors are worth the care
  9. Once cooked, slice the burrito in half (or thirds, if you prefer) and serve immediately. Garnish with extra cilantro or a dollop of sour cream if desired. Enjoy! I hope you like it; I sure do!

  • For best results, use high-quality Monterey Jack cheese.
  • If you don't have a smoker, you can skip the smoking step or try grilling the cheese lightly instead.
