📖 Instructions

  1. In a large mixing bowl, whisk together the yogurt, lemon juice, ginger-garlic paste, green chilies (finely chopped), garam masala, turmeric powder, coriander powder, cumin powder, and salt. Make sure everything is well combined. Don't be shy with the mixing!
  2. Add the paneer cubes to the marinade. Gently toss to ensure all the cubes are evenly coated. This part's kinda meditative, you know?
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or preferably longer (up to 2 hours) to allow the paneer to absorb all those amazing flavors. Patience, young padawan!
  4. If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning during grilling. Metal skewers are easier, but bamboo adds a nice touch, I think...
  5. Thread the marinated paneer cubes onto the skewers. Leave a little space between each cube for even cooking.
  6. Heat a grill pan or preheat your oven to 400°F (200°C). If grilling, lightly oil the pan to prevent sticking. If baking, use a baking sheet.
  7. Grill or bake the paneer skewers for 8-10 minutes, turning occasionally, until they are nicely browned and cooked through. I like mine a little charred, what about you?
  8. In a small bowl, mix the honey and red chili flakes (optional). This is a finishing glaze – so tasty!
  9. Once the paneer is cooked, brush it with the honey-chili glaze. Grill or bake for another 2-3 minutes to let the glaze caramelize a bit. Ah, the sweet smell of success!
  10. Remove from the heat and let the paneer tikka rest for a couple of minutes before serving. Serve hot and enjoy with mint chutney or your favorite dipping sauce. Mmmmmm!

📝 Notes

  • Adjust the amount of green chilies based on your spice preference. Feel free to experiment with other spices!
  • For extra flavor, you can add a pinch of asafoetida (hing) to the marinade.
  • If you dont like honey, use maple syrup instead!
