bruneian fattoush: a taste of brunei

Bruneian Fattoush is my take on a classic Middle Eastern salad, given a delicious Bruneian twist! Imagine a symphony of fresh, crunchy vegetables – crisp lettuce, juicy tomatoes, cool cucumbers – tossed with toasted pita bread croutons and a tangy, flavorful dressing. It's the perfect light lunch, side dish, or appetizer.

My aunt, who’s a fantastic cook (seriously, her Nasi Katok is legendary!), introduced me to this dish. She added a Bruneian flair by using local ingredients and a slightly sweeter dressing than the traditional version. The result? A salad that's both refreshing and utterly delicious. It’s light, fresh, and surprisingly satisfying. I think it’s perfect for those hot humid days.

📖 Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss together 1 cup of romaine lettuce, 1/2 cup chopped cucumber, 1/2 cup chopped tomatoes, 1/4 cup chopped red onion, and 1/4 cup chopped parsley. Make sure everything's nice and evenly coated, okay?
  3. Cut a pita bread into bite sized pieces; toss em with 2 tablespoons olive oil and a dash of salt and pepper. Bake for 10-12 mins, or until golden brown and crispy – watch them like a hawk to prevent burning. These are your delightful crunchy croutons!
  4. In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons lemon juice, 1 tablespoon pomegranate molasses, 1/2 teaspoon sumac, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. This is your awesome dressing, get ready to be amazed!
  5. Once the pita is done and has cooled slightly, add it to the big salad bowl along with the veggies. Don't forget to add your favorite crunchy stuff—I like adding some roasted chickpeas for extra protein and texture.
  6. Drizzle the dressing over the salad and gently toss to coat. Taste it and adjust the seasoning as needed. You're the boss!
  7. Arrange the salad on a serving platter and garnish with extra parsley, pomegranate seeds (if you're fancy!), and a drizzle of more olive oil. Serve immediately and bask in the glory of your culinary masterpiece!
  8. Optional: For an extra flavor kick, consider adding some crumbled feta cheese or toasted sesame seeds. Trust me, the sesame seeds add a nice nutty flavor profile. And don't forget to check for any nasty typos before posting!

📝 Notes

  • For a richer flavor, try using toasted sesame oil instead of regular olive oil.
  • Add some grilled chicken or fish for a more substantial meal.
  • Don't be shy with the pomegranate molasses – it adds a nice sweetness and tang!
