  2. Next, grab that lime juice and pour it over the diced fish. Make sure all the pieces are completely submerged. I usually use about 1/2 cup for a 1x serving, but adjust based on the amount of fish. Let it sit for at least 15-20 minutes, giving it enough time to 'cook'. Oh, and don't be surprised if you see the fish change color. That's the magic of acid doing its work!
  3. While the fish is marinating, let's whip up that amazing passion fruit dressing! Strain the passion fruit pulp to remove any seeds, which is super simple, and set aside. Grab your mixing bowl and whisk together 2 tablespoons of passion fruit pulp, 2 tablespoons of lime juice, 1 tablespoon of olive oil, and a pinch of salt. Taste it as you go and adjust the seasoning.
