Now, let it sit, undisturbed, for about 20 minutes. Keep an eye on the sea bass! You’re aiming for an opaque color – an indication that it’s ‘cooked’ by the acidic lime juice. Stir gently to ensure all the pieces are evenly exposed to the lime.
  3. While that's marinating, we can move on to the other ceviches! For the Shrimp Ceviche, do the same thing but this time with the shrimp. Let it marinate for about 15-20 minutes. For the Scallop Ceviche, you can do the same thing for around 10-15 minutes.

  5. For an extra touch, some people add small chunks of sweet potato, but I like to keep it classic. Once your ceviches are ready, transfer them to smaller serving bowls. Garnish with a few extra cilantro sprigs, and a slice of lime. A few extra chilies are always welcome!
