This Cilantro-Lime Chicken and Rice Casserole is my go-to weeknight meal. It's super easy to make, bursting with fresh flavors, and always a crowd-pleaser. I even made this for my friend's birthday party last month and everyone loved it. One of my friends, Sarah, actually asked for the recipe three times!

The combination of juicy chicken, fluffy rice, and vibrant cilantro is simply irresistible! The lime juice adds a zesty twist that brightens up the entire dish. It's the perfect balance of savory and refreshing. I developed this recipe over time. Originally, it had way too much cilantro but my brother told me it was a bit too intense. I reduced the amount, and that made it much better.

📖 Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish; this prevents sticking and makes cleanup a breeze!
  2. Cook the rice: Prepare your rice according to package directions. I usually use long-grain white rice. Fluff it with a fork once it's cooked. Don't overcook it!
  3. Prepare the chicken: Cut the chicken breasts into bite-sized pieces. In a large bowl, toss the chicken with olive oil, lime juice, and about half of the chopped cilantro. Season generously with salt and pepper. Really get that chicken coated!
  4. Sauté the chicken: Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook until it's browned and cooked through, about 5-7 minutes. This step is crucial for getting good color and texture.
  5. Combine everything: In a large bowl, gently combine the cooked rice, cooked chicken, remaining chopped cilantro, diced tomatoes, and corn. If you're feelin' it, toss in a little extra lime zest! It adds a lovely bright note.
  6. Bake the casserole: Pour the chicken and rice mixture into the prepared baking dish. Spread it out evenly. If you want some extra flavor, sprinkle some more salt and pepper on top.
  7. Bake: Bake for 20-25 minutes, or until the casserole is heated through and bubbly. The cheese should be melted and slightly golden brown. Watch it carefully so it doesn't burn; ovens can be tricky sometimes!
  8. Cool slightly: Let the casserole cool for a few minutes before serving. This helps it set up a bit and makes it easier to scoop up.
  9. Serve and enjoy: Serve warm and enjoy! This casserole is delicious on its own, but you can pair it with a side salad or some avocado for a complete meal.

📝 Notes

  • Feel free to adjust the amount of cilantro and lime juice to your liking.
  • If you want to add some extra flavor, sprinkle a little cheese on top before baking.
