But seriously, you don't have to spend a fortune on this delicious beverage. I've mastered the perfect recipe using Cava, and I'm going to let you in on the secret. It's so easy to make, you'll be amazed.

  2. Once the Cava is well-chilled, gently pour the desired amount of Cava into a champagne flute. A good starting point is about 3-4 ounces (90-120 ml).
  3. Carefully measure the orange juice. I love to use fresh squeezed orange juice but you can use good quality store-bought juice in a pinch. Add between 1-2 ounces (30-60 ml) of chilled orange juice to the Cava in the flute. Again, adjust this to your taste!
  4. Gently stir the Cava and orange juice together with a long spoon. Do it smoothly, dont' want to loose those pretty bubbles!, and avoid stirring too vigorously to prevent the mimosa from becoming flat.
  5. Add an optional garnish, if desired. A thin orange slice, a few fresh berries, or even a small sprig of mint make the Cava mimosa look even more inviting..
