This recipe for quiche with puff pastry is my go-to when I want to impress guests or just treat myself to something special. It's surprisingly easy to make, but the result is a beautiful and delicious quiche that everyone will rave about. There's nothing quite like seeing the joy on someone's face when they have a taste of your yummy cooking.

I love using puff pastry because it makes the quiche so elegant, but you can also use a regular pie crust if you prefer. I always buy my puff pastry from a local bakery; it's so much better than the stuff from the supermarket, but you can certainly use what is available to you. I mean, let's face it, it's still going to be delicious.

  1. Preheat your oven to 400°F (200°C). This is crucial for a perfectly baked quiche!
  2. On a lightly floured surface, gently roll out your puff pastry sheet to about 12 inches in diameter. If it's store-bought it's important to handle it gently, it can be quite delicate. Don't stretch it!
  3. Carefully transfer the puff pastry to a 9-inch pie dish. Gently press it into the bottom and up the sides. Trim any excess pastry; I like to pinch it to create a nice edge. If you're feeling fancy, you can even crimp it!
  4. In a large mixing bowl, whisk together 3 large eggs, 1 cup of heavy cream, 1/2 cup of grated Gruyere cheese, a pinch of salt, and a generous amount of freshly ground black pepper. Don't be shy with the pepper! A little black pepper goes a long way and it's important for taste!
  5. Add in the filling ingredients. I usually use about 1 cup of cooked and crumbled bacon, 1/2 cup of chopped cooked vegetables (like peas, or maybe chopped carrots), and 1/4 cup of chopped fresh chives. I'm very creative when it comes to quiche fillings!
  6. Pour the egg mixture evenly into the pastry crust. Make sure the filling is level across. It's an important step when it comes to even cooking, you don't want one part burnt and other part uncooked!
  7. Carefully transfer the assembled quiche to the preheated oven. Bake for 35-40 minutes, or until the crust is golden brown and the filling is set. You can use a knife to check it. If the knife comes out clean it's done. Otherwise give it another 5 minutes.
  8. Once baked, let the quiche cool slightly before slicing and serving. It’s best served warm, but it's also delightful cold. The key is to not rush the cooling process!
  9. Enjoy! Serve with a simple salad, maybe a side of roasted vegetables or some fresh fruit—it's your quiche, make it a party!

  • Feel free to adjust the amount of vegetables and cheese according to your preference.
  • If you don't have fresh chives, you can use dried chives instead.
  • Make sure your puff pastry is completely thawed before using it to avoid issues with baking
