So, I had an epiphany – what about an Italian Wedding Soup Sandwich? A culinary twist that's both comforting and unexpected.

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking sheet, or line it with parchment paper for easier cleanup. This is crucial to prevent sticking and to make your life easier!
  2. In a large mixing bowl, combine the ricotta cheese, parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until everything is well combined. Don't overmix – we don't want tough sandwiches!
  3. In another bowl, whisk together the marinara sauce and a tablespoon of olive oil. A little olive oil adds some richness, trust me!
  4. Gently spread some of the marinara mixture onto each slice of bread. Now we're talkin'! This adds a delicious base layer of flavor.
  5. Spoon a generous amount of the ricotta mixture onto one half of each slice of bread. Make it a good amount. We're not shy here!
  6. Top with the remaining marinara mixture, and then sprinkle some mozzarella cheese over each sandwich. The cheese helps to make everything hold together nicely.
  7. Carefully top with another slice of bread to complete the sandwich. Press gently to seal.
  8. Bake for 15-20 minutes, or until the bread is golden brown and the cheese is melted and bubbly. Keep an eye on them; ovens can vary wildly!
  9. Let the sandwiches cool for a few minutes before slicing and serving. This will make them easier to cut and prevent a molten cheese explosion!
