1. First things first, let's get that sausage sizzling! Heat up your large skillet over medium heat. Add a tablespoon of olive oil or butter — your choice. When it’s hot, add your sausage links (or crumbles) and cook to your liking, breaking them up with a spatula as they cook. Once cooked, remove them and set aside; we'll come back to them later!
2. Next up, the eggs! Crack your eggs into a mixing bowl and whisk together with a little salt and pepper to taste (approximately 1/4 teaspoon of each, or to your taste). Add a splash of milk or cream for extra fluffiness (optional, but recommended!),
3. Pour those whisked eggs into the same skillet you cooked the sausage in (after giving it a quick wipe if needed). Let it sizzle gently, stirring occasionally with a spatula to keep it from sticking and to ensure it cooks evenly. Once cooked, remove the eggs and set them aside.
