This recipe is my go-to for a quick, satisfying, and portable breakfast or brunch. Perfect for a picnic in the park, a hike in the mountains, or just a lazy weekend morning at home. I remember one time, my friend took this to work. They ended up sharing it with others which started a whole craze!

  5. If you have a panini press, this is where you'd use it! Place your buttered bread in the press, ensuring it is heated evenly and lightly toasted.
  6. If you don't have a panini press, lightly toast the bread on each side in a dry skillet for optimal results. You can also use a toaster oven.
  7. Time to build that masterpiece! Spread a layer of your favorite cheese (cheddar is an oldie but a goodie) on one slice of toast. Top with the cooked sausage, followed by the scrambled eggs. Finally, add a bit more cheese on top of the eggs, before topping it off with your second slice of bread.
  8. Once your sandwich is assembled, give it a gentle press or use your butter knife to keep everything in check. It will help keep everything contained for a neat and delicious bite!
