This recipe is a twist on a classic, using the unique nutty flavor of Minnesota wild rice to create a surprisingly delicious and hearty sandwich. It's perfect for a quick lunch, a satisfying snack, or even a light dinner. This recipe was inspired by a hike I took up in northern Minnesota--the scenery was stunning, and I was starving when I got back to the car!

  1. First things first, make the wild rice mixture. In a large skillet, saute 1/2 cup of finely chopped onion and 1/2 cup of finely chopped celery in 2 tablespoons of butter until softened. This should take about 5 minutes, but don't rush it, let those veggies mellow.
  2. Next, add 1 cup of cooked wild rice to the skillet, along with 1/2 cup of chicken broth and 1/4 cup of chopped fresh parsley. Stir to combine everything nicely. Season with salt and pepper to taste. Let this simmer for about 10 minutes, allowing the flavors to really mingle. You'll know it's ready when the liquid is mostly absorbed and the rice is tender.
  3. While the wild rice is simering, prepare your bread. Slice a rustic loaf of bread, or whatever bread you choose, into about 1-inch thick slices. It's up to you, I used a sourdough once and it was amazing!
  4. Now for the assembly. Spread a thin layer of mayonnaise (or your fave condiment) on each slice of bread. Spoon the wild rice mixture onto one slice of bread, ensuring it's evenly distributed. Top with the other slice of bread and gently press down to ensure a nice, snug fit.
  5. Finally, you can cut the sandwich in half, or leave it whole, whatever you fancy. You can also lightly toast the sandwich in a pan or under a broiler for a crispier outside and warm inside. Serve immediately and enjoy!
  6. P.S. Don't be afraid to get creative with your fillings! Add some crunchy bacon bits for extra yumminess or some sliced hard-boiled eggs. Heck, even some leftover turkey or roast chicken would work great!

  • Make sure the wild rice is cooked according to package directions before using it in the recipe. You can use leftover cooked rice, too!
