This creamy tomato and basil salad is my go-to summer dish. It's incredibly simple to make, yet bursting with fresh flavors. I developed this recipe after a particularly disastrous attempt at a store-bought salad kit – let's just say the dressing was a crime against taste buds. I figured if I could make a mean lasagna, surely I could conquer a salad!

Seriously though, this salad is super versatile. If you don't have fresh basil on hand, feel free to substitute with other fresh herbs like oregano or parsley. You can also add other things like cucumbers or olives, if you're in the mood for something a bit more adventurous. It’s all about having fun with it, after all!

📖 Instructions

  1. First things first: Wash and dry your tomatoes. Nobody likes a soggy salad! Seriously. I mean it.
  2. Next up: Chop those tomatoes. I like to cut them into roughly 1-inch pieces. Don't stress about making them perfectly uniform – a bit of rustic charm is nice, right?
  3. Time for the basil! Give those leaves a good wash and then chiffonade them. That just means you're gonna slice them finely – they'll look like pretty little ribbons.
  4. Now, let's get to the dressing. In your mixing bowl, whisk together the olive oil, balsamic vinegar, garlic (minced, of course!), salt, and pepper. Taste it – you might want to adjust the seasoning a bit, to your liking.
  5. Carefully add the chopped tomatoes and basil to the bowl with the dressing. Gently toss everything together to coat. Try not to get too aggressive; we want the tomatoes to stay juicy and intact.
  6. Finally, give it a taste test before you serve! Is there enough salt? Pepper? Maybe a squeeze more balsamic? Let your taste buds be your guide!
  7. Spoon that beautiful salad into a serving bowl. Garnish with extra basil leaves (because, why not?). Serve immediately and enjoy every delicious bite!

📝 Notes

  • Taste the dressing and adjust seasonings to your liking. Freshly ground black pepper makes all the difference!
  • If you prefer a thinner dressing, add a teaspoon more of olive oil
