Get Started: In a large mixing bowl, gently combine the ground lamb, grated onion, minced garlic, dried oregano, dried mint, salt, and black pepper. Be careful not to overmix; this can make the burgers tough.
Shape the Patties: Divide the mixture into equal portions and shape them into patties about 3/4 inch thick. Use your thumb to make a small indentation in the center of each patty; this helps them cook evenly and prevents them from bulging.
Rest (Optional): Cover the patties with plastic wrap and let them rest in the refrigerator for at least 30 minutes. This allows the flavors to meld together. While the patties are resting, you can prepare the tzatziki sauce.
Make Tzatziki: In a separate bowl, combine the Greek yogurt, grated cucumber (squeeze out excess water first!), minced garlic, fresh dill, lemon juice, olive oil, salt, and pepper. Stir well to combine. Taste and adjust seasonings as needed.
Cook the Burgers: Heat a large skillet or grill pan over medium-high heat. Brush with olive oil to prevent sticking. Place the lamb patties in the hot skillet, ensuring not to overcrowd the pan. Cook for about 4-5 minutes per side for medium doneness, or until the internal temperature reaches 160°F (71°C). Adjust cooking time according to your preference.
Toast the Buns: While the burgers are cooking, lightly toast the burger buns in a toaster or skillet. This adds a nice texture and flavor.
Assemble the Burgers: Spread a generous amount of tzatziki sauce on the bottom bun. Place the cooked lamb patty on top, then crumble feta cheese over the patty. Add any additional toppings you like, such as sliced tomatoes, red onion, or lettuce. Top with the other half of the bun.
