Last week, I was completely swamped with work. I had a deadline looming and my brain felt like scrambled eggs. I needed something fast, healthy, and delicious for lunch. The fridge was looking a bit sad, but thankfully, there was some leftover turkey and a lonely avocado staring back at me. And so, my friends, the amazing turkey and avocado wraps were born!

It’s a perfect way to use up any extra turkey you might have from Thanksgiving, christmas, or any other feast!   1. First, let’s get that turkey prepped! If you have leftover turkey from Thanksgiving, you are already ahead of the game. Slice it into thin strips about 1/4 inch thick. If you are using raw turkey breast, cook it through and let it cool completely before slicing. Remember to wash your hands thoroughly throughout the process!
  2. Now for the avocado. Pick a ripe avocado. You’ll know it’s perfect when it yields to gentle pressure. Cut it in half lengthwise, remove the pit, and scoop out the flesh into a bowl. Mash it with a fork until it’s creamy but still has some texture. A little chunky is okay! Add a pinch of salt and a squeeze of lime to brighten things up. If you’re feeling fancy, add a little chopped cilantro too!
  3. Time to assemble! Lay out a tortilla. Spread a thin layer of mashed avocado on it. Then, add your sliced turkey. I like to make a nice even layer. If you're short on turkey or want extra veggies, feel free to stuff them in there! Think: shredded lettuce, diced tomatoes, maybe even some leftover roasted sweet potatoes if you’re feeling adventurous.
  4. Gently fold the tortilla. Start by tucking in the sides, then roll it up tightly. Make sure everything is snug inside so it doesn't spill out. If the tortilla starts to tear, don't panic! You can always use a toothpick to secure it.
  5. Optional final touches: You can lightly brush the tortilla with olive oil, either before or after wrapping. This helps to crisp it up a bit when you warm it up later. Also, feel free to add more cilantro or any other herbs you enjoy.
  6. Ready to enjoy? You can either eat them cold, straight from the assembly line, or give them a quick warm up. You can microwave them for about 30 seconds, or better yet, heat them up in a pan over medium heat for a minute or two, just until they’re heated through and lightly browned and crispy.
