  2. In a large bowl combine all meatloaf ingredients; mix well and form into 4 muffins. 3. Bake for 20-25 minutes. 4. Sweet potatoes: steam or boil until tender. Mash with butter, salt, and pepper.

Tip: Add chopped mushrooms or zucchini to the meatloaf mixture for extra veggies.
