OK, I'm not exactly the health nut. I love my comfort food, and let's just say that sometimes that equates to a whole lot of takeout and maybe a few too many cookies. But I'm always looking for ways to sneak in some healthy goodness without sacrificing flavor. That's where this superfood recipe comes in! It's jam-packed with nutrients but still super delicious. In a large bowl, toss the bell peppers, zucchini, and broccoli with olive oil, salt, and pepper. 3. Spread the vegetables on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned. 4. While the vegetables are roasting, cook the quinoa in the broth according to package directions.
    1. Once the quinoa is cooked, fluff it with a fork. Let it cool slightly.
    2. In a large bowl, combine the cooked quinoa, roasted vegetables, balsamic vinegar, and salt and pepper to taste.
    3. Mix everything together and serve chilled or at room temperature.
