For most white rice, this usually means combining 1 cup of rice with 2 cups of water, bringing it to a boil, then reducing heat to low, covering, and simmering for 15-20 minutes, or until all the water is absorbed. Fluff with a fork and set aside.
Prepare the Tofu: Drain the firm or extra-firm tofu and press out excess water by wrapping it in paper towels and placing a heavy object on top for about 15-20 minutes. This step helps the tofu crisp up nicely. Cut the tofu into small cubes.
Season the Tofu: In a mixing bowl, toss the tofu cubes with 1 tablespoon of olive oil, 1 teaspoon of chili powder, 1/2 teaspoon of cumin, 1/4 teaspoon of garlic powder, and a pinch of salt and pepper. Make sure the tofu is evenly coated with the spices.
Cook the Tofu: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned tofu and cook for about 8-10 minutes, flipping occasionally, until the tofu is golden brown and crispy on all sides. Remove from the skillet and set aside.
