  1. Preheat your oven to 375°F (190°C). Grease your 9x13 inch baking dish; I like to use Pam, makes cleaning a breeze!
  2. In a large bowl, gently combine the ground turkey, egg, bread crumbs, milk, curry powder, salt, and pepper. Mix until just combined; don't overmix, you don't want it to be tough!
  3. In a medium saucepan, gently sauté the onion and garlic in a bit of oil until softened, like about 5 minutes. Don't burn the garlic, it'll ruin the whole dish!
  4. Add the sautéed onion and garlic mixture to the ground turkey mixture. Stir in the kimchi. Mmm, kimchi!
  5. Pour the mixture into the prepared baking dish, spreading it evenly. I like to press it down gently for an even bake.
  6. In a small bowl, whisk together the Korean BBQ sauce and apricot jam. This is where the magic happens! Pour this amazing sauce evenly over the Bobotie mixture. Make sure to get every corner!
  7. Bake for 30-40 minutes, or until the Bobotie is golden brown and bubbly. The internal temperature should reach 165°F (74°C).
  8. Remove from the oven and let it rest for about 10 minutes. This helps it set a little, so it's easier to serve.
  9. Garnish with crispy fried onions before serving. Its the perfect finishing touch, don't skip this step!
