Stir until the sugar and salt dissolve completely. Thinly slice the cucumbers, either with a mandoline or just your trusty knife. Toss the cucumber slices into the pickling liquid, making sure they're submerged. Cover the bowl and refrigerate for at least 30 minutes – the longer they sit, the more flavorful they get. I usually let mine sit for at least an hour. It makes a big difference!
  2. Now, let's work on the shawarma meat. In a large bowl, combine the ground lamb, shawarma seasoning, grated onion, minced garlic, lemon juice, and olive oil.
